Busy Morning “Walking Breakfast”
There are those mornings when you get to sit and enjoy a cup of coffee and slowly greet the day and then there are the mornings you are scrambling just to grab your cup of coffee. It can be overwhelming sometimes and when it's early in the morning the last thing you want to do is be creative but you also don't just want to have cereal for breakfast again. I’ve been there, so I made the simplest breakfast recipe that will hopefully make your mornings a little less hectic.
This hand-held breakfast only takes five minutes of prep, and is easy to eat on the go, so bonus you don’t have to worry about dishes!
Let’s get started with what you will need.
INGREDIENTS
1 Tortilla
Handful shredded cheese of choice
1 Egg
Meat of Choice (Bacon, Sausage, Turkey Bacon, etc.)
Salt/ Pepper
INSTRUCTIONS
Preheat your oven to 350ºF
Layout one tortilla open face
Place a handful of your cheese of choice in the middle of the tortilla
Create a small circle within the cheese and crack an egg into the center of the cheese
Season with salt and pepper as desired
Place your meat of choice on top of your cheese and egg mixture
Fold all four corners in to resemble a square shape
Flip over and place on a baking sheet
Cook at 350ºF for 25 minutes
