crockpot Ramen
Crocket Chicken Ramen
INGREDIENTS
2 pounds chicken tenderloins
Salt/pepper
4 cloves garlic minced
1 ½ cups matchstick carrots
1 large red bell pepper diced
8 ounces sugar snap peas
5 medium scallions chopped (save one for serving)
8 cups chicken stock
3/4 cup low sodium soy sauce
2 tablespoons brown sugar
2 chicken flavored ramen noodles w/seasoning packets
8oz of baby Bella mushrooms
1 TBS Sesame seed oil
Cilantro (just a few stems for plating)
2 eggs (optional serving suggestion) hard boiled for plating
Jalapeños (optional)
Instructions
Put the chicken in the crockpot along with the chicken stock (you can use chicken bone broth for added protein).
Season generously with salt and pepper. Add sesame oil and all of your veggies inside the crock pot along with the seasoning packets from the ramen and cook on high for 4 hours.
After 4 hours shred your chicken or remove and cut into bite size pieces. Then add your ramen noodles and place inside the crockpot for 10 min until they are cooked.
Serve with cilantro and scallions for a fresh taste! You can also add some Sriracha, ginger, jalapeños, and crushed pepper for more spice!
Don’t forget to add hard boiled eggs on the side for added protein and more flavor but it’s totally optional.
This recipe is super customizable and you can add as many veggies as you like!
