Ham and White Bean Soup
INGREDIENTS
3 cans of great northern beans
1 TBS salt
2 cups chicken broth
3 cups cubed ham (leftover ham would be amazing)
1 cup of celery
1 cup of onion
1 cup of carrots
3 cloves of minced garlic
1 teaspoon dried oregano to taste
1/2 TBS freshly ground black pepper to taste
2 -4 bay leaves
Instructions
Place beans inside of the crockpot along with your chicken broth or bone broth.
For added flavor,on a skillet, sauté onions, ham, celery,garlic and carrots. Keep stirring until onions are translucent and everything is coated with a generous amount of salt, pepper and oregano. (if you prefer, you may place all vegetables directly into crockpot without sauteing them).
Pour mixture back into the crock pot along with 2-4 bay leaves to infuse flavor.
Cover and cook on high for 3-4 hours or low for 6 hrs or until the veggies are tender.
Serve with some crusty French bread and enjoy!
