Easy Fajita Dinner

 

INGREDIENTS

  • 1/3 Cup of Salsa

  • Shredded Cheese

  • 1 Package of Fajita Seasoning

  • 1 8oz Package of Cream Cheese

  • 4 Chicken Breasts

  • 2 Large Bell Peppers

There’s just something about a good fajita — the smell, the taste, the sizzle, the perfect bell pepper to meat portions. I don’t really think you can go wrong. While fajitas are amazing it can be a lot of prep work, especially when you've lived a whole life by 5:30 the last thing you want to do is to spend hours in the kitchen for a meal. So, here is a cheesy baked fajita dish that is super simple 1 pan meal to throw together and is so delicious your kids will ask for seconds.

 

INSTRUCTIONS

  1. Preheat your oven to 375ºF

  2. In a medium-sized bowl place your 1/3 cup of salsa, two (2) cups of shredded cheese, one package of fajita seasoning, and one eight-ounce package of cream cheese and mix together.

  3. Place your chicken breast in a deep oven-safe dish (if your chicken breast is super thick then cut the chicken breast in half so it cooks evenly.)

  4. Take your mixture and scoop it onto your chicken breast until everything is covered.

  5. Add some more shredded cheese on top of your chicken (as desired)

  6. Don't forget to cover with foil so that nothing dries out!

  7. Bake at 375ºF for 40 minutes

  8. You can eat the chicken just like this or you can heat up some tortillas and throw it in. And a side of Spanish rice never hurt anybody!

    Pro Tip: If you like things with more of a kick then add

    some jalapeños to your chicken breast and let it bake for

    the last 15minutes.

PRO TIP!!

Make Leftovers! If you need some ideas, shred up the remaining chicken and throw it in a salad or make some nachos with it later in the week.
