Easy Italian Sausage Sandwiches

As moms we have so much going on at any given time on top of carrying the mental load of making dinner. So here is a quick and easy recipe to take off some of the stress away for your families next meal time. All you need is two baking sheets, your ingredients, and an oven. This recipe is super hearty, so it’s perfect if you don’t want to make any sides. Its picky-eater tested and husband approved!

 

INGREDIENTS

  • 1 Large Onion

  • 1 package of your favorite mushrooms (I used white button)

  • 3 Large Bell Peppers (red,green,yellow - whatever you have on hand!)

  • Olive Oil

  • Salt/Pepper

  • 1 Package of Italian Sausage Links (spicy or mild - your choice)

  • 1 package of Naan Bread

  • Log of Mozzarella Cheese

INSTRUCTIONS

  1. Preheat your oven to 400ºF. Prep a baking sheet with aluminum foil. Cut up your onion, bell peppers, and mushrooms into slices and place them on your baking tray.

  2. Coat generously with olive oil and mix together so everything is evenly coated. Add a generous portion of salt and pepper to taste and mix so it’s evenly spread through. Place your sausage links on top of your vegetable mixture equal lengths apart.

  3. Bake at 400º for 40mins & flip the sausage links halfway thru.

  4. While your sausage and vegetables are cooking, prepare your bread. Cut your mozzarella log into rounds about ½ inch thick. Place your cut mozzarella on top of your naan and bake for the last 10 mins.

  5. To put together, take an Italian sausage link with the vegetables and place it in your mozzarella-covered naan to create your cheesy and flavorful sandwich. These will come out big, packed with protein, full of flavor, and the perfect amount of cheese.
