WHITE CHICKEN CHILI

SLOW COOKER WHITE CHICKEN CHILI

INGREDIENTS

  • 4 cans of white great northern beans

  • 1 TBS salt

  • 1 TBS pepper

  • 4 cups chicken broth

  • 1 TBS garlic powder

  • 2 4oz cans of green chili’s

  • 1 teaspoon ground cumin

  • 1 TBS dried oregano

  • 2 pound bone-in, skinless chicken thighs, trimmed of excess fat

  • 2 cans of sweet white corn

  • 1 package of cream cheese

  • 1 small yellow onion

  • 1 Cup of half and half

    Optional serving suggestion:

    Fresh lime juice & chopped fresh cilantro and avocado

    Instructions

  • Put the chicken in the slow cooker. Add the chicken broth, garlic powder, cumin, green chilis, oregano, salt, pepper, cream cheese, half and half. Cover and cook on low for 6 hours or high for 4 hours, or until the beans are tender and chicken are cooked through .

  • Shred the chicken with a fork inside the crock pot. Ladle the chili into bowls and add fresh lime juice, jalapeño and garnish with cilantro.

  • This is so easy and full of flavor! I would definitely measure with your heart as far as seasonings go this is very customizable and budget and family friendly! The chilis add a punch of flavor but are not spicy! This would also be a great meal to freeze and save for later!
